WHOLE WHEAT BANANA BREAD
This recipe is one of my favorite recipes ever. It is very easy, quick, and my husband loves it. I also love the smell of banana bread in the oven, it makes me feel relaxed and happy. I think I use this recipe at least once a month.
The best bananas for this recipe are those very ripe with the skin full of freckles. I like to use a mix of whole wheat and oat flour, and sometimes I add some walnuts and/or chocolate chips for extra happiness.

Ingredients:
3 bananas, very ripe
1/3 cup melted butter or vegetal oil
1/3 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
1 pinch of salt
1 large egg
1 teaspoon ground cinnamon
1 cup whole wheat flour
½ cup oat flour*
Instructions:
Preheat your oven to 350ºF (180 ºC). lightly grease a 9” x 5” loaf pan.
Mash the bananas using a fork or potato masher.
In a large bowl, beat the butter (oil) and sugar until smooth. Add the vanilla extract, baking soda, salt, egg, cinnamon and bananas, and whisk until combined.
Add the flours, stirring until smooth.
Scoop the batter into the pan, smoothing the top.
Bake for 50 minutes to 1 hour or until a toothpick inserted into the center comes out clean.
Allow the bread to cool and then remove it from the pan & ENJOY!

*How to make oat flour: Just place 1 cup of rolled or old fashion oats into the bowl of your food processor or blender and pulse until a powder-like consistency.
